I Can Cook Fish!!!

Ok, y’all. I know that I said that I was gonna start posting all my Thanksgiving recipes. And today’s eas gonna be Aunt Nita’s Sweet Potato Casserole. Well, I just cooked fish–for the first time–and have to write about it. I will probably give y’all Nita’s Sweet Potato recipe too, since everyone is waiting for it.

ANYways, more importantly, I have never cooked or liked fish. The only fish that I like was ones that Daddy cooked or Mama Jean cooked after we caught them out of our pond at Big Bass. Well, I was home alone tonight, and fantasizing about Thanksgiving when I realized that I had not eaten today. In lieu of just running to a fast food place or a pizza place (which I have been doing too much lately) i looked in the freezer, and there were some tilapia filets. I thought about it, and thought. My Granny J was an amazing woman. I could blog for years stories about her. I have got hundreds of stories about Granny J, from saving my life many times (literally) to falling asleep in fried rice. Granny and I had a very special relationship. Born about 70 years ago, Granny J was a true Southern Woman. She brought herself up from nothing (literally–she lived in a boxcar for a while) to become a force to be reckoned with. I will begin to share more of her life with you goin forward. BUT today, upon popular demand, I give you my Granny J’s Cornbread Dressing Recipe. This recipe was never written down, and I had to talk to my mother for almost half an hour until she could give me some accurate measurements. I told her “alot” is not a measurement. Oreo Pie

oreo4Okay, I love Oreo Cookies. And Pies. So there is only one thing that could make me happiest: Oreo Pie. I used to work at a deli in Montgomery named Chappy’s Deli. They had an Oreo Pie there that I just loved. My stepmom used to make this Oreo Pie, and dare I say…it’s better. This will take you 10 minutes to throw together. After it chills for an hour or two, I know that you are gonna call me and cuss me out. It’s THAT good. (The reason you will cuss me out is ’cause you will eat the whole thing.) Peach Cobbler

Ok, it’s that time of year again, y’all. Now I am going to start giving up all my favorite Thanksgiving recipes. The first recipe is my own Peach Cobbler. Peach Cobbler is a dessert that is so easy and so good, you HAVE to make this.

Being raised in Alabama, we have peaches in Chilton County, and also all over the lovely state of Georgia. But for this recipe, you need to use canned peaches. I know that sounds like sacrilege, but use the canned ones from the store, or your own canned ones.

Every holiday I make this. Now during the summer I serve it with homemade vanilla ice cream. Now that is so so good. But you can go to the grocery and pick up a package of Breyers, just tell everyone it’s home made. ‘Tater Pudding

I know you really have no idea what that heading means, but there exists, in my family, a dessert called ‘Tater Puddin’. My Big Mama (who was a Choctaw Indian) apparently made the world’s best Tater Pudding. I have only had hers, and yeah it is good, but I have nothing to compare it against. This is a slightly sweet, custardy dessert. I am thinking of pulling this one out for Thanksgiving. Big Mama would always have one of these at any special occasion at her house, and Thanksgiving this year is gonna be one of those special occasions. Macaroni and Cheese

Ok, so I have to come clean. I have not perfected my Mac and Cheese recipe. I know, I know, I’m Southern, and I should be able to do this. But I can’t seem to figure out my mix of ingredients. Now, every version I try is good, but not what I want it to be.

Here is my BASE recipe. My roommate Kacy hates the texture of eggs, and so he just spit this out when he ate it. It bakes up pretty much as a macaroni quiche.

Help me!

14 ounces Macaroni

1 stick Butter

6 Eggs

4 cups milk

1 pound cheddar cheese (Shredded)

1 teaspoon salt

Cook macaroni, combine ingredients and bake at 325 for 40 minutes.

What do I do to this? Breadcrumbs? tried it. Onions? tried it. Kacy hated that one too…. HELP!!!

Chicken Roll

Ok, so there is this bakery in Flushing called Mr. Tu’s which is across the street from my job and serves these Chicken Rolls. They taste like a chicken pot pie wrapped in delicate buttery flaky goodness. I have to know how to make these. Come on fellow foodies. Let’s put our noses to the ground and figure this out! Help me help you!!!
